Applesauce Muffins


From Wild About Muffins
Makes 6 large muffins or 12 small muffins
Preheat oven to 400F (200C)

In a large bowl combine well:
2 eggs
1/2 cup brown sugar
1/2 cup oil
1 cup applesauce
1/2 cup raisins

In a small bowl combine well:
13/4 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground allspice


Combine wet and dry mixtures.  Fold together until just mixed.  Pour into prepared pan and bake for 20 to 25 minutes.

Note:  I like the applesauce because Selena can eat the muffins.

almost one year!

It is the end of November and Thanksgiving is here again.  Seems like yesterday when Selena was just born.  Now she can explore and walk now.  She is energetic and wants to do everything.  Today is swim day so Selena is the fish in the water.  My baby just loves to swim.  Mom is trying to teach her not to drink the pool too. 

The other day when Rudy and I went grocery shopping I bought one butternut squash to made baby food from.  I peeled and cut the squash into squares then baked it for half an hour.  After a short blend in the food processor it was ready.  The texture of squash is so rich and yummy.  Selena loved it instantly.  I have also made peas and apple sauce.  The apple sauce makes a good addition to cereal in the mornings.  Mommy ends up eating the leftovers.  How sweet and nutritious!

Now what to do for Selena's first birthday.  Banana bread was a thought.  Got to go think some more.

story time!

Made it to the library today. It looks like a good start. Selena enjoyed looking at and trying to get more books. I hadn't realized there were so many other tots there too. After story time, I went to check out some books for her. Yeah! Can't wait for next Thursday morning.

time flies and oh where is the money!

It has almost been one year since Selena was born. She has grown into an amazing little baby and soon to be toddler. I would love to see her grow into a fun loving and energetic little girl always willing to help. Napping has been easier too and now I can predict a schedule where I can comfortably work on the computer. I can read my favorite books or catch up on blogs and Face book contacts at the same time keeping an ear out for little peeps just in case baby wakes up. My next endeavor is going out to the public library to check out some books. And now to do more research on stay at home jobs.

My other interest is to become a virtual assistant for those people who wish to get something done but don't have time. A personal assistant via the internet or phone. Just send your project to me and I will help you complete it. I am working out a pricing scheme for how long it will take to do each project and the cost for each hour. Please let me know if there is any need out there for this type of service. Any comments appreciated!

crawling around and Twinkle Twinkle little star

I went online yesterday to breastfeeding.com to find some songs to sing to Selena. She loves a few tunes before nodding off. We sang together while she was in my lap. Twinkle Twinkle little star then I fed her and she nodded off for the afternoon. After a good nap Selena was ready to conquer the floor and the table. I certainly have to keep up with her nowadays!

what's that down there?

Looking at the floor a lot. Oh my need to have lunch. Selena is looking down as well as looking up and around. She keeps squatting down then up then down again. It is getting dizzy but always fun to look at how she is doing. A little cranky this morning Selena settled down to a nap followed by lunch. We then finally got out with the dog and even washed the dog, Chip. He has a whole new view of the floor now and a little cleaner too. Every day I'm on the move. Selena is calling Mommy from over there. Better go see what's up.

lawn mowing

Got up today to bright sunshine, oatmeal and a nice cup of coffee. Selena is 9 months and crawling. she loves to pull up on her toy push lawn mower which has little balls all different colors. She loves to turn the balls and test out the wheels of this pretend mower. Someday she might help daddy with the actual grass in the yard! Last week grandma 's friend had a bunch of girls clothes which was donated to daddy and mommy. Selena was overjoyed, or mommy was overjoyed that our baby was dressed and in fashion now for the next three years. I am having fun now trying on the different outfits. Thank you grandma!
